      明朝是炒青綠茶的全盛時代,廣泛采用鍋炒殺青,蒸青散茶逐漸爲炒青散茶所取代。至16世紀末到17世紀初已基本上形成了與現代炒青綠茶相同的烘青綠茶加工方法。

      烘青绿茶大部分用于窨制各种花茶,称之为茶坯。特点是外形完整稍弯曲、锋苗显露、干色墨绿、香清味醇、汤色叶底黄绿明亮。是用烘笼进行烘干的,烘青毛茶经再加工精制后大部分作熏制花茶的茶坯,香气一般不及炒青高,少数烘青名茶品质特优。以其外形亦可分为条形茶、尖形茶、片形茶、针形茶等。条形烘青,全国主要产茶区都有生产;尖形、片形茶主要产于安徽、浙江等省市。其中特种烘青,主要有黄山毛峰、太平猴魁、 六安瓜片、敬亭绿雪、天山绿茶、顾诸紫笋。江山绿牡丹、峨眉毛峰、金水翠峰、峡州碧峰、南糯白毫等。如黄山毛峰:产于安徽歙县黄山。外形细嫩稍卷曲,芽肥壮、匀整,有锋毫,形似"雀舌",色泽金黄油润,俗称象牙色,香气清鲜高长,汤色杏黄清澈明亮,滋味醇厚鲜爽回甘,叶底芽叶成朵,厚实鲜艳。

      在制綠茶的幹燥過程中直接烘幹的茶葉,爲烘青或烘青毛茶。審評毛茶時注重外形緊直程度與嫩度,應不帶煙異氣味。審評級坯茶時注重嫩度與淨度,符合于哪一個級檔。烘青外形較松,芽葉較完整,香氣較清醇,滋味較清爽,湯色較清明,葉底較綠明完整,亦較耐泡,采用“通用型茶葉感官審評方法”。烘青毛茶分5級10等或分7級14等,逢雙等設標准樣。審評時按照實物標准樣茶定等級。某一套標准樣茶,只適合于某一烘青茶,例如“浙烘青”只適合于浙江部分地區産的烘青茶級別對照樣。

      烘青綠茶特點介紹

      特點是外形完整稍彎曲、鋒苗顯露、幹色墨綠、香清味醇、湯色葉底黃綠明亮。烘青綠茶有幾個特點:一,香氣:濃郁,沈悶且有烘烤過的味道;二,湯色:與最後一次幹燥有關。1,幹燥溫度過高,湯色清亮泛綠;2,溫度稍低,湯色微黃,但清澈度降低。三,葉底:色澤統一,泛翠綠鮮嫩。烘青工藝是爲提香所爲,適宜鮮飲,不宜長期存放。

      烘青綠茶有青香味,且幹色澤一般表現爲綠色,白毫較顯,一般用拿上手會看見白毫四散,飄在空中。因爲幹燥到位。但條索略粗松,因爲制茶過程中如果揉撚過重、過長,則會出現黑條,幹茶有明顯的火烘味,香氣較銳,沖泡後一般的茶湯會表現爲黃綠色,或嫩綠色,翠綠色。滋味鮮爽,回甘,但不耐泡,葉底香氣一般不持久,因爲高溫烘培後,部分香氣物質如芳香類會揮發,所以香氣不持久,葉底表現爲嫩綠,或綠亮。不會顯褐色。

      烘青綠茶經精制後稱花茶級坯,分1~6級和片茶。審評要點:1~2級坯,細緊有苗鋒,不帶梗;3~4級坯尚緊結,稍有茶嫩梗;5~6級坯,較空松,有茶梗,色澤枯暗。

      烘青綠茶分布範圍

      烘青綠茶産區分布較廣,産量僅次于眉茶。以安徽、浙江、福建三省産量較多,其它産茶省也有少量生産。烘青除部分在市場上銷售的素烘青外,大部分是用來窨制花茶的。如茉莉花、白蘭花、玳玳花、珠蘭花茶、金銀花、槐花等。銷路很廣,(東北、鄭州、北京、西安、山東)茶價很高,深受國內外飲茶者喜愛。

      烘青綠茶制作方法

      初制工序

      烘青綠茶初制工序分爲:殺青、揉撚、幹燥三個過程。

      1.殺青

      其杀青、揉捻工艺基本上与眉茶、珠茶相同,仅干燥过程中采用烘焙。 烘青绿茶的初制工序中的杀青,基本上与眉茶操作方法相同。

      2.揉撚

      至于揉撚工序,要根據烘青大部分內銷耐泡、條索完整的要求特點,揉撚程度要比眉茶輕些。揉撚時最好采用分篩複揉,(老嫩混雜葉)。

      3.幹燥

      烘青干燥工序,分为毛火烘焙和足火烘焙两种,现分述如下: 毛火烘焙: 采用高温薄摊,快速烘干法。温度80-90℃,每笼摊叶3-4斤,均匀摊在烘笼口,中心较厚,四周稍薄,叶摊好后,再置于火炉上。每隔3-4分钟翻一次,手离摊叶5cm处有热感,感到有温度,将烘笼取下,置于竹盖上,以免茶未落入火炉,产生烟味,影响茶叶质量,烘约15分钟,达六七成干,茶叶稍硬有触手感觉,即可起烘摊晾半小时。 呈火烘焙: 采用低温慢烘法。温度70℃左右,每笼摊叶4-5斤,每隔10分钟翻拌一次,(翻拌方法同毛火一样,手势要轻)。当手揉茶叶成粉末时,即可下烘,呈火烘焙,历时60分钟左右。

      較大的茶廠,一般都采用自動烘幹機或手拉的烘幹機。烘效率較高。10斤/小時。毛火的進風溫度控制在100-200℃。攤葉厚1-2cm,時間大約10-15分鍾。毛火下葉攤晾,回潮半小時後再呈火烘焙。呈火溫度在90-100℃,約經15分鍾,即達幹燥程度。烘青烘幹,最後煙氣,焦氣。火功不能偏高。用烘幹機烘幹,熱風爐不能漏煙。用烘籠烘茶,要用優質木炭。必須揀淨“柴頭”防止燃燒冒煙。火力要求均勻,切總明火上簾。下下焙茶,操作宜輕,防止碎茶落入火爐中産生煙氣。不論機械烘幹或烘籠烘幹,都要正確掌握火溫和茶葉幹燥程度,防止焦茶或火功偏高。烘青大多作爲茶素壞,進窖行制花茶。關于花茶窖制單獨做爲一個章節進行闡述。主要原理:利用茶葉吸附性和鮮花吐香性,合理地進行拌和窖制,從而形成具有花香又有茶味的成品茶,對提高茶葉的經濟價值起到很大作用。

      烘青綠茶加工技術

      烘青綠茶,除少量以烘青産品在市場直接銷售外,大多數的烘青作爲窨制花茶的茶胚,通過窨花,加工成花茶,供應喜喝花茶的人們消費。如中國的東北、華北、西北和四川成都地區等,每年需用大量的花茶。烘青綠茶的制法分殺青、揉撚、幹燥3個工藝過程。

      殺青:殺青的目的和方法,與炒青綠茶基本相同,無甚差異。

      揉撚:由于烘青綠茶絕大部分內銷,要求耐沖泡,條索完整。因此,揉撚程度要比炒青綠茶輕些,爲了保持條索完整而又緊結,揉撚中最好采用分篩後,篩面茶短時複揉的方法,老嫩混雜的原料,其效果尤爲顯著。

      幹燥:烘青綠茶幹爆工序,采用烘焙的方法,分爲毛火與足火。人工烘焙:人工烘焙是在專用的蔑質焙籠上進行的,也可自備小型烘房中進行。

      打毛火:烘茶前半小時,置木炭于焙竈(或火盆)中生火(或用煤炭,須采用間接火溫,要安滬條,上覆蓋鐵鍋)。待煙頭全部燒盡後,上蓋一層灰,中厚四周薄,待火溫從四周上升,用焙籠烘焙時,焙心受熱妥均勻。烘茶前,把焙籠置于焙竈上,烘熱焙心。打毛火時,焙心溫度要求到90℃時開始上茶,上茶時焙籠應移到簸箕內,攤葉要中間厚四周薄。每籠攤揉撚葉0.75~1.0千克。上好茶後,用雙手在焙籠兩邊輕輕一拍,使其碎末茶落入簸箕中,以免烘焙時落入火中生煙。然後將焙籠輕輕移放在焙竈上烘焙。衫烘焙過程中,每隔3~4分鍾翻茶1次。翻茶時應將焙籠移到簸箕內,以左手指按住焙心,右手將焙籠傾向胸前掀起,使茶胚翻至一邊。然後放平焙籠,雙手撈起茶葉,均勻撒攤于焙心上,再輕輕拍打一下焙籠,小心故回焙竈上。如此翻茶上烘,大約經5~7次,達5成幹左右,即可下焙攤涼。如用煤火幹燥,必須采用間接火溫,避免吸收異味。打毛火總的要求是掌握“高溫薄攤快速”的原則。

      攤涼:打毛火後,須進行20~25分鍾的薄攤,使水分重新分布。

      打足火:打起火則采用“低溫侵烘”,溫度由70℃左右逐漸下降到60℃左右。每籠攤葉2~2.5千克,每隔5~8分鍾翻焙一次,待手捏茶葉成粉末時,即可下烘,完成烘青綠茶的手工作業。

      機制烘青:所謂機制烘青,就是綠茶的幹燥作業借用烘幹機完成。烘幹機的種類有手拉百頁式烘幹機和自動烘幹機2種。

      打毛火:手拉百頁式烘幹機,烘前半小時把火燒好,然後開動鼓風機,使熱空氣進入烘箱。當進風口溫度達到110℃左右時,開始上茶,用手將揉撚葉均勻地撤在頂層百頁板上,攤葉厚度約1厘米。烘2~3分鍾,拉動第一層百頁板,使茶胚落入第二層,再在第一層板上均勻撒上揉撚葉,這樣依次上葉並拉動各層百頁板的把手,使茶胚逐層下落,當茶胚落入第六層後(最底層),應在小窗口隨時檢查烘幹程度,調整撒葉厚度及拉把手時間。烘幹程度同樣是掌握5成幹左右,即手握茶胚不粘手,稍感刺手,但仍可握成團,松手會彈散。條索卷縮,葉色烏綠,減重25%~30%,含水量約40%~45%。茶胚落入出茶口後,及時掏出,攤涼20~25分鍾後,打足火。打足火時的方法,與打毛火的操作大體相同。不同之處是,進風口的溫度比打毛火時低,一般爲80~90℃,攤葉厚度比打毛火時稍厚,通常爲1.5~2.0厘米。

      自動烘幹機:采用自動烘幹機,茶胚由輸送帶自動送入烘箱,每分鍾上葉3~4千克。攤葉厚度掌握在1.0~1.5厘米,最後自動卸葉。烘焙時間,快速約10分鍾,中速約15分鍾,慢速約20分鍾。生産上一般多采用快速或中速。不過,當前自動烘幹機的種類(型號)較多,快中慢速因機型不同而略有差異,在生産中要不斷總結經驗,靈活掌握。同時,必須根據揉撚葉含水量,調節烘箱溫度和上葉量,如揉撚葉含水量較高,則烘箱溫度相應地要高些,上葉量則應減少,含水量較低,則相反。打足火後的茶胚同樣要及時攤涼,烘箱底部的腳茶匝好常清理,分開攤放。打足火時,溫度與手拉百頁式烘幹機一樣,比打毛火時低,爲80~90℃,適宜中速或慢速。這兒要提出注意的一件事是,不管炒青綠茶,還是烘青綠茶,初制後的成茶,必須攤涼後才能裝入口袋運往倉庫。
